I would stick to the USB interface if possible.

Hi Rob,
You can look here on how to wire the encoder buffer board. http://www.superdroidrobots.com/Schematics/Encoder_Buffer_Board.pdf
The I is for the index if your encoders don’t have it don’t wire it. The encoder buffer board comes with the solder pads already soldered, you don’t need to solder A and B together. -

Make sure you are connecting S1 to the right pins in the Arduino, Try running their example code SoftwareSerial.
